Mini Pineapple Upside Down Cake

Christmas is fast approaching. Many households are already planning their holiday meals from the main course to the sweet desserts. Some have the same things year after year as a sort of family tradition. Others like to change it up from time to time. Would you like to add something new to the dinner table this year? If so, then consider experimenting with colorful treats that steal the show and make the occasion more memorable. One thing that fits the bill is a mini pineapple upside down cake. Make your own if you have the time or order online to reduce holiday stress.

The Ingredients

You will need pineapple tidbits, brown sugar, butter, maraschino cherries, yellow cake mix, eggs, and canola oil. Some might prefer to have pineapple slices instead of just bits and pieces to really make each mini cake stand out. The cherries, half or whole, can be placed at the middle for color and contrast. Just make sure that you keep the juice from the can as you can use that for later. If you don’t have canola oil vegetable oil will do. You could also make the cake from scratch by using all-purpose flour, baking powder, and salt instead of the cake mix. Get as many muffin cups as you need for your household.

The Procedure

Pre-heat the oven to around 350 degrees Fahrenheit before starting to cook. Use the butter as grease and flavoring at the sides of your muffin cups. You can also add a spoon of sugar on each of these. Now you’re ready to put one pineapple slice per cup. Shoot a cherry in the holes. Set these aside.

Turn your attention to the cake mix. Transfer the powder in a large bowl then add the juice, the oil, and the eggs. Mix everything up with an electric tool but go on the lowest speed setting to ensure even distribution of the ingredients. Wait until the batter is moist before picking up speed. Once it’s done, you can divide this batter into the pineapple cups.

Put these inside the hot oven and bake for about half an hour. It’s done when the top appears golden brown. Remove the mini cakes from the oven and allow them to cool for at least five minutes before serving. When they are cool enough to touch, turn the muffin cups upside down and let the cakes slide to a baking sheet.

If all of those seem too much work, order online and enjoy expertly baked
